Wheat flour was replaced with chia seed powder at ratios of 25, 50, and 75%. The ability of the chia-enriched flour to bind water and oil, form foam, and emulsify was estimated, and the cake size was also estimated. The results indicated that the ability of chia to bind water is much higher than that of oil. The ability of wheat flour containing chia increased significantly (P \u2264 0.05) with the increase in the replacement ratio from 3.54 to 6.65 g\/g when 25% and 75% of chia powder were added, respectively. Chia-enriched flour did not show significant differences in the ability to bind oil, even with an increase in the replacement ratio. The highest value recorded for oil binding was 1.86 g\/g at a 50% replacement ratio. The results showed the good ability of chia seed powder to form an emulsion. This capacity increased with the replacement ratio, reaching 75.7 ml when 75% chia seed powder was added, which differed significantly (P \u2264 0.05) from the other ratios. In addition, we noted a significant decrease in the size of the cake containing chia powder by 50% compared with that of its egg-containing counterpart.<\/p>\n\n\n\n<p
