A significant difference was observed in ash content, with whole cardamom showing the highest value (5.5%) compared to seeds (2.1%). Bulk density analysis revealed that cardamom seeds had the highest value (0.463 g\/cm\u00b3), followed by clove (0.416 g\/cm\u00b3) and whole cardamom (0.423 g\/cm\u00b3).<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Alcoholic extracts showed higher refractive index values than aqueous extracts, with the highest value recorded in clove ethanolic extract (1.401), while the lowest was observed in aqueous seed extract of cardamom (1.372), indicating higher extraction efficiency of bioactive compounds in alcohol. Regarding solubility, clove aqueous extract showed the highest solubility (40.0%), whereas the lowest value was recorded in ethanolic extract of cardamom seeds (19.0%). pH values ranged between 3.62 and 4.57, indicating a more acidic nature in clove.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Clove exhibited the highest total phenolic content (377.33 mg GAE\/g) and antioxidant activity (75.36%) compared to cardamom (162.7 mg GAE\/g and 58.87%, respectively), confirming its strong antioxidant potential.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Electrical conductivity (EC) and total dissolved solids (TDS) showed significant differences among samples, with higher values recorded in cardamom (2760.0 \u00b5S\/cm and 1787.0 mg\/L), reflecting a higher content of dissolved ionic compounds.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Microbiologically, ethanolic extracts of cardamom (1% and 2%) showed the highest inhibitory activity against Staphylococcus aureus (8\u201310 mm), while clove ethanolic extract exhibited stronger activity against Escherichia coli (7\u201310 mm).
