With the increasing demand for fresh, high-nutrient foods, non-thermal technologies such as High-Pressure Processing (HPP), Pulsed Electric Fields (PEF), Cold Plasma, and Ultrasound have emerged as effective alternatives to traditional thermal treatments. The research aims to analyze the mechanisms of enzyme inactivation (e.g., Polyphenol Oxidase and Peroxidase) and the preservation of bioactive compounds (e.g., phenols, carotenoids, and vitamins). Findings indicate that non-thermal techniques can preserve over 90% of phenolic content and antioxidant activity, with varying enzyme inactivation efficiency depending on the technology and operating parameters. The study concludes that combining these technologies (Hurdle Technology) represents the future for ensuring optimal biochemical and chemical stability.<\/p>\n\n\n\n<p
